For the low carb dieter it is important to get in your vitamins and with this low carb broccoli salad you can’t go wrong. It can be made with mostly on hand ingredients such as dried cranberries, mayo, grated cheddar cheese and of course fresh broccoli.
I make this flavorful and crunchy salad at least once a month, if not more. It depends on my ingredient supply. I love buying fresh broccoli and for this recipe, one bag is enough. What makes it low carb is the Stevia which gives the mild sweetness instead of sugar. Ready to make this?
Low Carb Broccoli Salad
This salad is great as a meal itself for the absolute broccoli lover like me. You can also pair it with grilled sausage or chicken as part of a low carb BBQ. It’s a filling salad that won’t leave you craving for carbs!

1 lbs. fresh broccoli
1/2 lbs. thin cut bacon
1/2 cup dried cranberries
1 cup Mayo
1/2 cup sour cream
1 small packet sweetener (such as Stevia, Sweet Additions or Truvia)
1 tbs. red wine vinegar
1 cup shredded cheddar cheese
Chop broccoli into small bites, then wash and let drain.
Meanwhile cook the bacon until crisp.
Mix together the mayo, sour cream, sweetener, vinegar, cranberries and pepper.
Toss broccoli together with the mayo mix and add the cheese and crumble the bacon over it.
This salad keeps well for up to 3 days in an air tight container in the fridge.
